Complete with raining truffle, caviar, fresh Japanese uni and mouth-watering ramen-style noodles enters the over-the-top Pasta Ramen (@pasta_ramen) pop-up. Brought by New Jersey-based chef Robbie Felice, Pasta Ramen has taken the city by storm over the past month, popping up in high-end locations and inviting intimate groups of food connoisseurs to come experience a wild culinary journey that emphasizes the finer things in life.
Expertly fusing Italian and Japanese cuisines, Felice dubs his experience Wafu-Italian, creating dishes like ramen alle vongole complete with house cured Japanese pancetta, manila clams, miso soup and chives; or the flavor-bursting cacio e pepe gyoza; uni ramen carbonara—a personal standout—delicately balanced with limone, sesame, uni, parmigiano, togarashi, black pepper mixed with quail egg; or the truffle porcini ramen, where the chef literally makes it rain with black truffles on the decadent concoction, complete with porcini truffle brodo and butter.
Rather than utilizing rice to present Japanese-style nigiri, Felice opts for his personal favorite Sullivan Street Toast to create a kanikama nigiri, Italian-style, as he tops the fish over the fresh-baked bread and complements the flavor with garlic miso basil crema and warm yuzu soy crab butter. The meal spans 11 courses, the last before the sweet and creamy dessert is the indulgent Japanese A5 Wagyu, which Felice dry ages in a secret location. The entire feast is paired with delicate sips of sake, which propel the intricate ingredients forward. Take it all in amid the warm and hip dining environment with hip-hop beats playing in the background. It’s a setting unlike any other, and an absolute must-visit while Pasta Ramen remains in Miami before heading on throughout other cities in the country.
